White fruit cake

If you like fruit cake, you’ll like this recipe.

  1. Cream together
    • 1 cup shortening
    • 2/3 cup sugar
  2. Add and beat in well
    • 1 egg
  3. Add one at a time and beat in well
    • 3 egg yolks
  4. Mix in
    • 1 tablespoon grated orange rind
    • 1/8 cup orange juice
  5. Mix together separately
    • 1/2 cup flour
    • 1 cup sultana raisins
    • 1/2 cup chopped citron
    • 1/2 cup chopped candied pineapple
  6. In a separate bowl, sift together
    • 2.5 cups flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
  7. Heat oven to 300° F.
  8. Add flour to creamed mixture and mix well.
  9. Add fruit and stir in well.
  10. Pour into greased spring-form pan 7.5 inches in diameter.
  11. Bake at 300° F. for 1.5 – 2 hours.
  12. Remove from oven, cool 5 minutes, then turn out and cool on rack.
